This isn’t the first time we’ve talked about Farm to Glass. Last year we released a series of beers that relied on using only local ingredients such as crimped barley, oats and even using local whey in our milk stout. This approach to brewing and using ingredients that are local to us is becoming increasingly important to us and so when we were approached by Simon Rogan’s Our Farm to talk about producing a beer that used ingredients that were grown at Our Farm, only ten minutes down the road from us, we jumped at the chance.

Simon Rogan is an internationally renowned, award-winning chef, recognised as one of the pioneers of the farm-to-table movement. In 2002, Simon opened his debut restaurant L’Enclume in The Lake District village of Cartmel, with a focus on hyperlocal and seasonal ingredients. The restaurant currently holds three Michelin stars, the top spot in the Good Food Guide and five AA Rosettes, as well as the top ranking in La Liste with Simon Rogan being the first British chef to achieve this.

We’ve used foraged ingredients at Fell before, but not woodruff and so the brew team were keen to get their teeth into experimenting with it.  We’ve been delighted with the results, the body of the beer has been specifically designed to complement and support the addition of woodruff.  It’s always a privilege to work with such talented and experienced people and with ingredients sourced as locally as possible, there’s even oats grown at the nearby Holker Estate in the beer.  Moreover, the chance to collaborate has been a truly beneficial experience to both teams.

The Woodruff was sourced from the farm as well as foraged from woods in the area by Liam, Head Chef at Our Farm, and his team. We then had 11 of the Simon Rogan team down with us for the brew day which was led by Imogen and John where the woodruff was added to the brew in place of standard hops.

The result is a traditional dark stout, which beautifully pairs the woodruff with a base of speciality malts. An aromatic nose of forest floor and cinnamon leads to flavours of sweet gingerbread, chocolate and tobacco, a suggestion of festive lebkuchen and a dry, leathery finish.
